Tomato and Walnut Loaf

Ingredients

2 cups raw walnuts
2 cups raw pumpkin seeds
1 cup sliced carrots
1 cup chopped red peppers
1 cup chopped onions
2 cups chopped sun-dried tomatoes
1 garlic clove (more, if desired)
2 tablespoons raw Tahini
1 cup fresh parsley/basil

Directions :

Drain and rinse the walnuts and pumpkin seeds,
process them with the carrots in a food processor.

Place the peppers, onions, parsley, tomatoes and garlic, tahini, herbs etc
in the processor bowl and blend with the existing mixture.

When nice and thick, turn out into a loaf tin (or whatever shape you want).

Can be served the same day, but if you can make it the day before there is a nice marinating that takes place which matures the taste and adds to its solidity.
